Cold Potato Leek Soup 冷製リーキポテトスープ

The first Julia Child’s recipe that Julie Powell ever cooked was Potato and Leek soup.  She described it as simplicity itself that makes the soup wonderful.  I made it once before, it was good but a little bit too much potato, too filling, then I found Martha Stewart’s Cold Potato Leek Soup‘s recipe.  I have decided to try this right after I read the ingredient list because it use only half of a small baking potato!  It turned out really great, refreshing and full of leek’s mild flavor!  Next time, I’ll try to substitute the cream with coconut milk, I believe it’s going to be excellent too!
